Commencement Brunch: Bacon and Gruyere Egg Bites

Ingredients

  • 4 slices bacon, diced
  • 6 eggs
  • 2 cups spinach
  • 1-1/3 cup greek yogurt
  • 2 cups shredded gruyere and pepper jack cheese
  • 1 tsp salt and black pepper

Instructions

  1. Spray nonstick muffin tray with nonstick cooking spray. In a blender, combine the eggs, yogurt, cheeses, salt, and pepper. Blend until completely smooth, 30 to 45 seconds. Pour into muffin tray.
  2. Divide the bacon evenly over the egg bites. Bake for 20 to 23 minutes on the middle rack, until the eggs are set.
